Peri Peri Chicken

PERi-PERi, also known as the African Bird’s Eye Chilli, is the key to our legendary, flame-grilled PERi-PERi chicken. I added another Tbsp each ofbutter and the sauce and it wasfine.

Great crispy skin, juicy breast meat and tender moist thighs. I recommend Nandos piri-piri sauce (a Portuguese-South African food brand and restaurant chain) available in various strengths/heat.It looks as if the piri piri sauce is divided between the glaze and the marinade, but no amounts are specified. Nice with salad and fries, but I like adding it to a pita with salad and garlic Greek yogurt (3/4 cup Greek yogurt and 3 cloves of crushed garlic with finely chopped chives). Everything else as per recipe. It had great flavour, a nice spicy punch to it, but not overwhelming and the juiciness of it blew me away!This recipe was amazing! But I felt compelled with this one, as I received a standing ovation for this meal. Careful here, ittakes less time than the wholechicken so be careful. It may well be the Swahili word for 'pepper' but Swahili is not widely spoken in Mozambique nor in Angola where the dish originates from; 'Swahili is traditionally regarded as being the language of coastal areas of Tanzania and Kenya. I used Frank's Red Hot Sauce to substitute for the Piri-Piri sauce (vinegary red pepper sauce) as it is not available where I live and it is the closest thing I had.
